These lemon sugar cookies in air fryer are light, crispy on the outside and chewy on the inside. Great for snacking or dessert! They are easy to make.

Preheat air fryer to 350 on BAKE. The rack should be on the MIDDLE level while cooking.
Line your trays with aluminum foil or use cookie trays that fit IF you want chewy cookies. Don't for crispier.
In a large bowl or stand mixer, cream butter and sugar for 4 minutes until light and fluffy. Add eggs, vanilla, lemon juice, and lemon zest and stir to combine.
Stir in flour, baking powder, baking soda, and salt and mix just until combined. Needs to be stiff like dough - not runny.
Roll dough into balls and drop on trays.
Bake for 5-7 minutes. Sprinkle with sugar or white sparkling sugar.
