Creamy Cauliflower Casserole Recipe

Creamy cauliflower casserole are the best thing we have made in an air fryer so far. This quick to make American dish is used as a side dish. Ready in 20 minutes with 10 minutes of prep time.

 1 head cauliflower
 1 container Greek yogurt4-4.5 oz
 4 oz grated Cheddar cheese
 1 c sour cream
 2 sprigs chopped green onion

Preheat your air fryer to BAKE at 350'

Cut cauliflower head into bite size pieces

In a medium pot, add cauliflowers pieces and enough water to submerge them completely. Bring to boil then simmer for 10 minutes.

Meanwhile, arrange the bacon strips on a baking pan lined with aluminum foil . Bake in the air fryer until they become crispy, approximately 8 minutes, then chop into pieces.

When cauliflower pieces are done cooking, drain and set aside a side for later use.

In a small mixing bowl, combine Greek yogurt, sour cream, and shredded cheddar cheese (save about 1 oz for later use), mix well until everything is incorporated.

In a casserole, toss cauliflower with yogurt mixture and chopped bacon. Add salt and pepper to taste.

Sprinkle the remaining shredded cheddar cheese on top of the cauliflower mixture.

Bake the casserole in the air fryer until the cheese melted completely, about 10 to 15 minutes.

When the cauliflower casserole is done cooking, remove it from the oven, garnish with chopped green onion. Serve immediately.

How to make creamy cauliflower casserole?

 

Here is what you need to create delicious cauliflower casserole. Use fresh cauliflower if possible otherwise use frozen cauliflower. You need one head of cauliflower and one container of greek yogurt. One can of yogurt should contain anywhere around 4oz to 4.5oz.

You also need grated cheddar cheese and sour cream. You can use different types of cheese. two sprigs of chopped green onion and salt & pepper is required as per your taste. This is all you would need handy before starting out.

Once you have all your ingredients ready you should set your air fryer to 350 for pre heat. Do not forget to set it to Bake.

First, start cutting the cauliflower. They should be cut into small bit size pieces. This should turn cauliflower into florets. Look at the reference image below.

 

Add these pieces of cauliflower into a medium size pot and pour enough water that these pieces submerge completely. Then boil cauliflower and let it simmer. While it simmers you can set an aluminum foil on a baking dish. Then put your bacon strip on the baking dish with the sheet. Then bake bacon strips in air fryer until they become crispy. It should not take more than 8 minutes if not cut into thick strips. Once the bacon is done, cut them into small pieces.

At this point the steamed cauliflower should have simmered fully. You can now drain all the water and set it aside. Now create a mixture of yogurt, cream  and cheese in a bowl. Mix all the ingredients well enough and create a good mixture.

 

Now you have prepared everything and ready to bake. Add cauliflower pieces, the mixture and bacon pieces into a casserole. Season the top of it with some more cheese. Then bake it for ten to fifteen minutes or until the cheese melts completely. Once its cooked, remove it and garnish with fresh green chopped onion or any kind of garnish you like.
